INGREDIENTS
For the shrimp:
1 pound large shrimp, peeled and deveined, tails removed
2 tablespoons olive oil
2 garlic cloves, minced
1/2 lemon, juice and zest
1/2 teaspoon crushed red pepper flakes (optional)
kosher salt and pepper to taste
For the white beans + kale:
2 cans cannellini beans, rinsed and drained
1 large bunch kale, leaves removed from stems and roughly chopped
3 tablespoons olive oil
2 garlic gloves, minced
1 onion, diced
Juice of half a lemon
Salt and pepper to taste
